Seared Salmon with Kale and Apple Salad

This dish brings together perfectly Seared Salmon with a refreshing Kale and Apple Salad, offering a blend of vibrant flavors and wholesome nutrition.


The salmon provides heart-healthy omega-3s, while the kale and apple salad is rich in fiber, vitamins, and antioxidants.


It’s a light yet satisfying meal that’s both healthy and delicious.


Ingredients


For the Salmon:

  • 4 salmon fillets (wild-caught preferred)

  • 2 tbsp olive oil

  • 1 clove garlic, minced

  • Juice of 1 lemon

  • Salt and pepper, to taste

  • Fresh herbs (optional: dill, parsley, or thyme)


For the Kale and Apple Salad:

  • 4 cups kale, chopped (remove stems)

  • 1 apple, thinly sliced (Granny Smith or Honeycrisp)

  • 1/4 cup walnuts or pecans, toasted

  • 1/4 cup feta or goat cheese (optional)

  • 2 tbsp olive oil

  • 2 tbsp lemon juice or apple cider vinegar

  • 1 tsp honey (optional)

  • Salt and pepper, to taste



Instructions


Step 1

Prepare the salad: In a large bowl, massage the chopped kale with a pinch of salt for 1-2 minutes to soften. Add the apple slices, toasted walnuts, and cheese (if using).


Step 2

In a small bowl, whisk together olive oil, lemon juice (or apple cider vinegar), honey (optional), and a pinch of salt and pepper. Toss the dressing with the kale and apple mixture until well combined.


Step 3

For the salmon, pat fillets dry and season both sides with salt and pepper. Heat olive oil in a skillet over medium-high heat, add minced garlic, and sauté for 30 seconds.


Step 4

Place the salmon fillets skin-side down in the skillet. Cook for 4-5 minutes until the skin is crispy. Flip and cook for another 3-4 minutes, or until the salmon is just cooked through.


Step 5

Drizzle fresh lemon juice over the salmon, and garnish with herbs, if desired.


Step 6

Serve the seared salmon alongside the kale and apple salad for a healthy and balanced meal.



Tips


  • Massage the kale with olive oil before adding the dressing to make it more tender.

  • Marinating the salmon in lemon and herbs for 30 minutes enhances its flavor.
