This Roasted Tomato Soup is a comforting, flavorful dish made with just a few simple ingredients.
Roasting the tomatoes brings out their natural sweetness, adding depth to the soup's flavor.
Whether enjoyed on its own or paired with a grilled cheese sandwich, this soup is a perfect way to warm up on a cozy night in.
Ingredients
2 lbs fresh tomatoes (Roma or plum), halved
1 medium onion, quartered
4 cloves garlic, peeled
2 tbsp olive oil
2 cups vegetable broth
1/4 cup heavy cream (optional for creaminess)
1 tsp dried basil (or fresh basil for garnish)
Salt and pepper, to taste
Instructions
Step 1
Preheat your oven to 400°F (200°C). Arrange the halved tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 25-30 minutes until the tomatoes are soft and slightly caramelized.
Step 2
Once roasted, transfer the tomatoes, onion, and garlic to a blender or food processor. Blend until smooth.
Step 3
Pour the blended mixture into a large pot and add the vegetable broth. Bring to a simmer over medium heat and cook for 5-10 minutes, stirring occasionally.
Step 4
(Optional) Stir in the heavy cream for added creaminess. Season with dried basil, salt, and pepper to taste.

Serve warm, garnished with fresh basil or a drizzle of olive oil if desired. Pair with crusty bread or a grilled cheese sandwich for the ultimate comfort meal.
Tips
For extra richness, you can add a splash of balsamic vinegar to the roasting tomatoes.
If you prefer a chunkier texture, pulse the soup instead of fully blending it.
