These Grilled Vegetables are packed with flavor and only take a few minutes to prepare. With just 5 basic ingredients and 20 minutes of cooking, this colorful and nutritious dish is perfect as a side or a main.


Whether you're grilling outdoors or using a grill pan indoors, this recipe is budget-friendly and brimming with fresh, smoky flavors.


Ingredients


  • 1 zucchini, sliced into rounds

  • 1 red bell pepper, sliced into strips

  • 1 yellow squash, sliced into rounds

  • 1 red onion, cut into wedges

  • 2 tbsp olive oil

  • 1 tsp Italian seasoning or dried oregano

  • Salt and pepper, to taste

  • (Optional) Balsamic glaze or lemon wedges for serving


Instructions


Step 1

Preheat your grill or grill pan to medium-high heat. In a large bowl, toss the sliced vegetables with olive oil, Italian seasoning, salt, and pepper until well-coated.


Step 2

Place the vegetables in a single layer on the preheated grill. Grill for 3-4 minutes on each side, or until the vegetables are tender and have visible grill marks.


Step 3

Remove the vegetables from the grill and transfer them to a serving plate. For added flavor, drizzle with balsamic glaze or squeeze fresh lemon juice on top.


Tips


  • For variety, you can add mushrooms, cherry tomatoes, or asparagus to your grilled vegetable mix.

  • Serve with quinoa or couscous for a complete meal.
