Ingredients
1 zucchini, sliced into rounds
1 red bell pepper, sliced into strips
1 yellow squash, sliced into rounds
1 red onion, cut into wedges
2 tbsp olive oil
1 tsp Italian seasoning or dried oregano
Salt and pepper, to taste
(Optional) Balsamic glaze or lemon wedges for serving
Instructions
Step 1
Preheat your grill or grill pan to medium-high heat. In a large bowl, toss the sliced vegetables with olive oil, Italian seasoning, salt, and pepper until well-coated.
Step 2
Place the vegetables in a single layer on the preheated grill. Grill for 3-4 minutes on each side, or until the vegetables are tender and have visible grill marks.
Step 3
Remove the vegetables from the grill and transfer them to a serving plate. For added flavor, drizzle with balsamic glaze or squeeze fresh lemon juice on top.
Tips
For variety, you can add mushrooms, cherry tomatoes, or asparagus to your grilled vegetable mix.
