The combination of protein-rich salmon, creamy avocado, and perfectly poached eggs on rye bread provides healthy fats, fiber, and omega-3s to energize your day.
It’s a satisfying and nourishing breakfast that will leave you feeling full and ready to tackle anything!
Ingredients
2 slices rye bread, toasted
1 ripe avocado, mashed (guacamole-style)
4 oz smoked salmon or cooked salmon fillets
2 eggs (for poaching)
1 tbsp white vinegar (for poaching)
Salt and pepper, to taste
Fresh dill or chives for garnish (optional)
Lemon wedge (for serving)
Instructions
Step 1
Toast the rye bread until crispy, then spread the mashed avocado evenly over each slice.
Step 2
In a small saucepan, bring water to a gentle simmer and add the white vinegar. Crack each egg into a small bowl and carefully slide it into the simmering water. Poach for 3-4 minutes, or until the whites are set and the yolk remains runny.
Step 3
Remove the poached eggs with a slotted spoon and place them on a paper towel to drain.
Step 4
Layer the smoked or cooked salmon over the avocado toast, then place the poached egg on top of each slice.
Step 5
Season with salt and pepper, and garnish with fresh dill or chives. Serve with a wedge of lemon for an extra burst of flavor.
Tips
For added flavor, sprinkle red pepper flakes or drizzle olive oil on top of the toast.
You can also use whole grain or sourdough bread as an alternative to rye.
