Creamy Rice Pudding with Cinnamon & Vanilla

A comforting and timeless dessert, Rice Pudding is enjoyed worldwide for its creamy texture and simple yet rich flavor.
This recipe combines milk, sugar, and vanilla for sweetness, with a sprinkle of cinnamon for warmth, making it a delightful end to any meal.
Ingredients
1/2 cup uncooked rice (preferably short-grain)
4 cups whole milk
1/2 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon (plus extra for garnish)
Pinch of salt
1 tablespoon butter (optional, for extra richness)
Optional Toppings
Raisins
Sliced almonds
Fresh berries
Instructions
Step 1: Cook the Rice
In a medium saucepan, add the rice, 2 cups of water, and a pinch of salt. Bring to a boil over medium heat. Once it reaches a boil, reduce the heat to low, cover, and simmer for 10-12 minutes until the rice is tender and the water is mostly absorbed.
Step 2: Add Milk and Sugar
Once the rice is cooked, pour in the milk and stir in the sugar. Continue to cook over medium heat, stirring occasionally to prevent sticking. Let it simmer gently for about 20 minutes until the mixture thickens and becomes creamy.
Step 3: Flavor with Vanilla and Cinnamon
When the pudding reaches your desired consistency, stir in the vanilla extract, ground cinnamon, and butter (if using). Mix well to ensure the flavors are evenly distributed.
Step 4: Serve and Garnish
Remove the pudding from heat and allow it to cool slightly before serving. Garnish with a sprinkle of extra cinnamon on top, and add optional toppings like raisins, sliced almonds, or fresh berries for a bit of texture and flavor contrast.
Tips
For extra creaminess, use half-and-half or heavy cream in place of part of the milk.
If you prefer a thinner pudding, add a little extra milk during cooking.
This pudding can be served warm or chilled, depending on your preference.
